Summer Desserts for Grown-Ups

Warning: I am neither a food blogger, a chef, nor a food photographer.  But I do really really like food, and I’ve stumbled upon some really delicious desserts in the past couple of weeks.  I hope you enjoy them as much as I did.  The first, Espresso Floats, can be ready in just a few minutes.  The second, Lemon Ice Yogurt Bars, takes a bit longer to freeze, so plan ahead.  It’s worth the wait.


Espresso FloatEspresso Ice Cream Float

Vanilla Bean Ice Cream
Fresh-brewed espresso
Whipped cream
Dark chocolate bar


Brew one shot of espresso (or some extra-dark coffee, if you don’t have an espresso machine).  While it’s brewing, use a potato peeler to shave some strips off of the chocolate bar.  Scoop some ice cream into a glass bowl.  Pour the espresso over the ice cream, add some whipped cream, and sprinkle the shavings over the top.  Serve immediately. (Stealing from my BF who made this for me last night.)



Lemon Ice Yogurt BarsLemon Ice Yogurt Bars

9 graham crackers
1/4 cup melted butter
4 cups Greek frozen yogurt
6 oz. Frozen lemonade concentrate
Whipped cream


Crust: crush graham crackers, and mix with melted butter.  Press into a 9×9 pan.

Filling: Let frozen yogurt and lemonade concentrate stand on the counter for a few minutes to soften.  In a stand mixer, blend yogurt and lemonade concentrate until smooth.  Pour over crust and place in freezer for 4 hours.

Topping: Cut frozen dessert into bars and place on serving plates.  Top with whipped cream and fresh blueberries.  Serve immediately. (Adapted from the back of Honey Maid Graham Cracker box.)
